Excess limes= cordial for summer.

Feeling very organised and happy about minimising wasting fruit.
On an unrelated topic (well, still food, actually), I did a Vietnamese cooking class last week- it was SO FUN, I loved it. So I have grabbed some kaffir lime leaves off the tree, picked some coriander and lemongrass from the garden (and bought a whole lot of stuff from the Asian food store!) and am heading down to make my dad a banquet for lunch. He's excited but I don't think he realises the quantities of ginger and 'scented things' (his words) I am planning to use...

  1. Oh yum! I bet lunch will be super delicious. I love Vietnamese food.

And lime cordial...could you share the recipe? I love lime although my little lime tree doesn't produce much fruit. I need to be nicer to it.

  3. Oooh yum - I want in at your lunch. I mentioned the course you'd done to the man of the house here and his eyes lit up! Big fans of 'scented' food here!

  4. looks yum. Just wondering how long you are able to keep it for as my recipe usually says it won't keep super long. Both my lemon and lime trees are groaning with fruit at the moment and I need to use some of them up!
